Home made Caesar salad

A good, home made Caesar salad is lovely and a great simple supper.

For the dressing:

  1. Mix all the ingredients above, check for seasoning. 

 

For a Caesar salad:

  1. Softly boil the eggs (1 minute simmering, then 6 minutes off the heat for soft yolk) peel, halve and set aside.

  2. Heat the oil in a small pan and add the garlic slices.

  3. Once the garlic starts to sizzle, remove.  Add the bread cubes and fry until golden and crisp, drain on kitchen paper. Season and sprinkle over a little grated parmesan, roll the croutons in this.

  4. Place the lettuce in a bowl, drizzle over some Caesar dressing, toss through.  Arrange on a plate / in a bowl. Top with croutons, grated parmesan or shavings, the eggs and the anchovies. Enjoy immediately!

Caesar Salad

For the Caesar dressing:

3 tbsp mayonnaise (shop-bought or home-made)
1 lemon, juice only
1 tbsp white wine vinegar
1 clove garlic, crushed
2 anchovies, very finely chopped
1 tsp dijon mustard
80g parmesan cheese, finely grated
salt and freshly ground black pepper

 

For the Caesar salad:

4 eggs
3 tbsp groundnut oil
1 garlic clove, peeled and thinly sliced
2 slices white bread, cut into cubes
1 Cos or romaine lettuce, torn into bite sized pieces
Parmesan cheese, shavings or finely grated
6 anchovy fillets, cut in half lengthwise
To serve (optional): crispy pancetta, avocado, char-grilled chicken
