Home made mayonnaise

To make a mayonnaise for the first time, make by hand with a whisk to understand the process. Once you are up and running, make by using an electric whisk or in a small bowl of a food processor.

  1. Mix all the ingredients above, check for seasoning.

  2. The key to making a mayonnaise is to add the oil little by little until an emulsion is formed. Also, try to have everything at room temperature, this will make emulsification quicker and easier.

Mayonnaise

2 egg yolks
pinch of salt
pinch of ground white pepper
pinch of dry English mustard powder
a little hot water
1 tbsp white wine vinegar
100ml extra virgin olive oil
200ml groundnut, grape seed or rape seed oil
