A flavoursome classic French dressing

A delicious dressing with the addition of Dijon mustard, honey and garlic. It is always very popular so I like to make a lot and keep it in the fridge for any last minute salads. 

  1. Place everything bar the oils in a bowl and whisk together until thoroughly mixed. 

  2. Pour the oils into a jug and slowly whisk into the vinegar mix until emulsified. Check for perfect balance of seasoning, sweetness and sharpness by dipping in a leaf of salad.

Red Wine and Dijon Dressing

3 tbsp Red wine vinegar
1 tbsp Dijon mustard
1 tbsp runny honey
1 clove garlic, crushed maldon salt
freshly ground black pepper
6 tbsp extra virgin olive oil
3 tbsp Groundnut oil
Endive, rocket, oak leaf, cooked green beans, some fennel
