Mother's Day brunch pancakes with crispy bacon & banana

Serves

4 persons

 

Ingredients

 

  • 250g self-raising flour

  • Pinch or two of salt

  • 1 medium egg

  • 300mls milk approx

  • 4 tbsp chopped chives or finely chopped onion

  • Pepper

  • 2 tbsp vegetable oil

  • 12 thin rashers smoked streaky bacon, cooked until crispy

  • 2 ripe, medium bananas, halved lengthways

 

Method

 

  1. Place the flour and salt, in a bowl mix well.

  2. Add the egg and enough milk and bring together to form a thick batter.

  3. Heat 1 tablespoon of vegetable oil in a non-stick frying pan and add 2-3 spoons of mixture to the pan.

  4. After 2 minutes, flip over with a spatula and cook for a further 2 minutes. Repeat the process until all the mixture is cooked.

  5. Add the bananas to pan and warm through, but do not overcook.

  6. Serve the warm pancakes topped with the half a cooked banana and 3 rashers of bacon.

My Mums Shortbread

 

Preparation time

Serves

15 small biscuits

 

Ingredients

 

  • 125g soft plain flour

  • 70g cornflour

  • 125g soft salted butter

  • 40g caster sugar

  • 40g icing sugar

 

Method

 

  1. Cream the butter and sugars until soft, don’t go mad.

  2. Sieve the flour and cornflour together then add.

  3. Knead well and chill slightly before rolling out and cooking at 180C/Gas Mark 4.
